Sales of lettuce and salad leaves reached an all-time high last year, according to the British Leafy Salads Association.
A record level of 786 million bags, bowls and heads of lettuce were sold - an increase of more than 23.5 million on the year before.
Although last year's warm weather played a part in sales, 72 per cent of shoppers said they bought more salad last year because they wanted to eat healthily.
