The new owners of Hilbury Court Hotel and restaurant in Trowbridge say they are excited about expanding the business.

Husband and wife John and Debbie Fox took over the business at the start of August and are keen to make the premises a hit with residents and non-residents alike.

Mr Fox, who has more than 25 years’ experience in the hospitality industry, said: “We’ve got a B&B near Bath which is OK, but it’s more touristy and more seasonal, getting busy in certain parts of the year, but then getting very quiet.

“We felt Hilbury Court is on a busy and important road in a nice part of Trowbridge and these days people want to sleep, eat and drink in the same establishment, so I can’t see why it wouldn’t work.

“I’ve lived in Wiltshire for 25 years and I knew Hilbury Court.

“I know it’s been a Mexican and an Italian restaurant, and it’s had its moments but not an extended busy period.”

Key among their plans, which include redecorating the hotel’s 15 rooms and offering tea, coffee and cake during the day, is transforming the restaurant into the area’s top steakhouse and grill. It has been renamed The London Bar and Grill and is already attracting new customers. Mr Fox said: “I see huge potential. I’ve never been so excited about anything in my entire life.

“This will work – good food and a good atmosphere. I know what people want. We’ve asked people what’s missing in Trowbridge and they said a good steakhouse and a good grill, so we said ‘Yep, let’s do it’.”

The London Bar and Grill will serve a modern British menu, including steaks as well as other contemporary dishes with all the trimmings. Prices will range from about £12 to £23 for a main course.
